Venga Venga Cantina and Tequila Bar in Otay Ranch Town Center is introducing the restaurant’s Guacamole Festival in celebration of the staple Mexican dish’s many regional preparations. Executive chef Richard Sandoval has crafted five guacamole dishes to represent his favorite Mexican selections. Each guacamole will be available for tableside preparation through June 15.
The guacamoles include:
•Yucatan: shrimp ceviche, spicy habanero salsa, orange juice, lime juice and sea salt
•Baja: kiwi, strawberry, mango, mint, jicama, chile arbol, lime juice and sea salt
•Norteño: chicharron, pickled onion, salsa fresca, fresh lime juice and sea salt
•Sur: grasshoppers, tomatillo, cotija cheese, onion and chile cascabel
(Yes, that’s right — grasshoppers! They add a pleasant crunch to this regional take on traditional guacamole from Oaxaca, where these delicacies are known as chapulines.)
•Pacifico: grilled beet, roasted walnut, queso fresco and citrus-chipotle salt
